These two recipes are packed with fruity goodness and are so simple to whip together… just 3 ingredients and 5 minutes to make! They’re both dairy-free, antioxidant rich, and you don’t need an ice cream maker to create them.

Peach coconut ice cream

1 ½ cups peaches, chopped & frozen
1/2 cup coconut milk
1 tbsp unsweetened coconut flakes
* optional: a bit of honey or a few drops of stevia extract

Wash and prepare fruit by removing pits. Cut the fruit into pieces and freeze overnight. Place the fruit, coconut milk and coconut flakes into a blender or food processor. Blend until desired consistency is reached. Depending on your blender or food processor, you may need to add more coconut milk to assist with blending. Enjoy the sweetness of the fruit on its own, or add sweetener of choice as desired. This ice cream is best served and eaten immediately. Refreezing will cause it to lose its creamy consistency.
